Shahi Besan ke Gatte

Shahi besan ke gatte ki subji is a part of an authentic Rajasthani cuisine prepared in a base of gramflour. Since Rajasthan has vast areas of land covered in desert, not much vegetables are available for cooking. Naturally, locals use the scarcely available veggies for cooking.

Gatte means cooked gram flour dumplings, which are added to the spicy gravy to ace this irresistible curry. It tastes best when served with roti or any other type of Indian flats bread, dal & plain rice in lunch.

Serving: 3-4 pax                                       Time to cook: 30 min

Ingredients for Gatte:

  • Gramflour (Besan) – 1 cup
  • Turmeric powder – ½ teaspoon
  • Red chilli powder – ½ teaspoon
  • Salt according to taste
  • Ghee/oil – 1 tablespoon

Ingredients for Curry:

  • Onion – 1 medium
  • Tomato – 1 ½ medium
  • Ginger garlic paste – 1 tablespoon
  • Green chilli – 2
  • Red chilli powder – ½ teaspoon
  • Turmeric powder – ½ teaspoon
  • Coriander powder – 2 teaspoon
  • Kasuri methi – 2 pinch
  • Coriander leaves – 1 teaspoon chopped
  • Oil – 2 tablespoon
  • Salt according to taste

 

Preparation of Gatte:

  1. Take Gramflour (besan) in a bowl. Add turmeric powder, red chili powder and salt. Mix all these ingredients in dry form.

             

2.Add 1 tablespoon oil and mix them with your hands.

           

3. Add little water and make a dough.

            

4. Now divide into 5 equal portions and make a roll.

5. Take a pan and filled with water and heat it. When water start boiling place all the rolls in it.

6. Cook it up to 15-20 min, if you feel water is getting less you can add water in it.

7. Transfer all the rolls in a plate and cut them.

8. Gatte are now ready. Let’s now prepare curry!

Preparation of Curry

  1. Take a pan add oil and heat it.

              

2. Add onion paste let it cook till it become brown.

3. Then add ginger garlic paste cook for 3 minute. Then add tomato and green chili paste, cook till tomatoes raw smell is gone.

4. Then add red chili powder, turmeric powder, coriander powder and salt. Mix it well and add ¼ cup water stair it.

5. Let it cook till oil separates and add remaining boiled water of Gatte and 1 cup of water.

6. Take a boil then add all Gatte in it, cook for 5 min. Add kasuri methi and mixed well.

How to Serve:

Once Shahi Gatte ki sabji is ready, garnish it with fresh coriander leaves and serve it hot with wheat roti, naan, paratha or steamed rice!

Healthy tip:

Shahi Gatte ki sabji is salty and savoury in taste with high fibre, less carbohydrates which makes it high on calories.
